Easy Thai Shrimp Rolls

Crisp, fresh, healthy and fun to eat, these rice-paper-wrapped parcels are guaranteed to be a hit. The dried rice paper wrappers can be found in the oriental/Thai section of many supermarkets. A little practice may be required to get the hang of working with the rice-paper wrappers, but it’s worth it.

Ingredients

SHRIMP ROLLS:
1/2 lb (250g) shrimp cooked and chopped
1/2 cup (125 ml) bean sprouts
1/2 cup (125 ml) carrot, grated
1/4 cup (60 ml) water chestnuts rinsed, drained and chopped
3 green onions, finely chopped
1/4 cup (60 ml) fresh coriander chopped
2 tbsp Peanut Sauce
Salt and freshly ground black pepper
10 – 12 round rice-paper wrappers

LIGHT THAI DIPPING SAUCE:
2 tbsp soy sauce
2 tbsp rice vinegar
1 tsp sesame oil
1 green onion finely chopped
sugar and hot red pepper flakes

Directions

SHRIMP ROLLS:

Combine shrimp with vegetables, herbs and peanut sauce. Season to taste.

To assemble the shrimp rolls: Have a bowl of hot water beside you and spread out a clean tea towel on your counter. One at a time, dip the rice-paper wrappers in water for 10 seconds, then place on the towel. Put about 2 – 3 tbsp (30 – 45 ml) of filling in a small log shape across the middle third of the wrapper. Fold the bottom third of the wrapper over the filling, then turn in each side. Dip your finger in water and lightly moisten the upper rim of the wrapper and roll it up.

Place the assembled shrimp rolls seam side down on a platter, cover with plastic wrap and set in the refrigerator until serving time. Serve with peanut sauce and Light Thai Dipping Sauce.

LIGHT THAI DIPPING SAUCE:

Combine 2 tbsp each soy sauce and rice vinegar, 1 tsp sesame oil, 1 green onion finely chopped and a pinch each of sugar and hot red pepper flakes.

Makes about 1/3 cup (75 ml)

TIP: Buy small, precooked
