Zucchini Frittata

This would be a great accompaniment to last weeks Ricotta Dill Bread. This Italian-style omelette is quickly prepared, hearty enough to feed a group, and very flexible, since you can combine odds and ends of cheese (try Fontina, Gruyere or Cheddar) and vegetables that have been languishing in the fridge.

Ingredients

2 tbsp olive oil
1 clove garlic, sliced
2 zucchini, trimmed and thinly sliced
Salt and freshly ground black pepper
2 green onions, finely chopped
1/2 cup parsley, finely chopped
10 eggs, lightly beaten
3 tbsp butter
1/2 cup Swiss cheese, grated
3 tbsp Parmesan cheese, grated

Directions

Heat oil in a small frying pan and toss in garlic. When garlic has coloured, scoop it out and discard. Add zucchini and toss over medium heat until browned. Season lightly and sprinkle with green onions and half the parsley.

Combine the eggs and zucchini mixture, and season with salt and pepper.

Preheat broiler. Over medium-high heat, melt 2 tbsp butter in a large (10 inch), well seasoned oven proof pan that can go into the oven. Pour in egg mixture. Leave for a couple of minutes to set the bottom, then shake the pan gently over the heat.

When the underside is lightly browned and top is still runny (another minute or two), sprinkle cheeses on top and dot with remaining butter. Slide frittata under the broiler until the cheese melts and the top starts to brown. Cut in wedges, sprinkle with the rest of the parsley, and serve at once.
